One of my all time favorites- Greek Calamari
Ingredients:
1 lb Calamari (Mixed Rings and Tentacles)
1 Cup Condensed Milk
3 Cups Flour
Salt & Pepper
½ Cup Diced Tomato
½ Cup Banana Peppers
½ Cup Sliced & Pitted Olives
2 Cups Rinsed Spinach
2 ½ tbsp Butter
3 finely diced cloves garlic
½ Cup White Wine
¼ Cup Parmesan Cheese
¼ Cup Feta Cheese
Instructions:
Marinate calamari in condensed milk overnight. Coat with flour, deep fry, place on paper towels, sprinkle with salt & pepper, and set aside.
Melt butter in medium saucepan, add garlic and sauté over medium heat for 30 seconds. Add tomato, peppers, olives, spinach and sauté for 90 seconds over medium heat. Add remaining ingredients stir, and let sauce reduce. Toss calamari in sauce, top with parmesan cheese (optional), and serve immediately. Enjoy!
